INGREDIENTS:

  • 225g/8oz dark chocolate
  • Digestive biscuits
  • 25g/1oz butter, melted

FOR THE FILLING:

  • 3 egg yolks
  • 50g/2oz caster sugar
  • 50g/2oz cornflour
  • 600ml/1pt milk
  • 100g/4oz dark chocolate (at least 70% cocoa solids)

FOR THE MERINGUE:

  • 2 egg whites
  • 100g/4oz caster sugar
  • 1/2 teaspoon vanilla essence

PREPARATIONS:

  1. Preheat the oven to 160°C/325°F/Gas mark 3.
  2. Put the digestive biscuits in a plastic bag and crush them with a rolling pin until they turn into fine crumbs. Transfer the crumbs to a mixing bowl.
  3. Stir the melted butter into the biscuit crumbs until well mixed. Press the biscuit mixture firmly into the bottom and up the sides of a 23cm/9in flan tin or dish to form the crust.
  4. To make the filling, beat the egg yolks, caster sugar, and cornflour in a large bowl until they form a smooth paste. If necessary, add a little milk to help create a smooth consistency.
  5. Heat the milk in a saucepan until it is almost boiling. Slowly pour the hot milk into the egg mixture, whisking well to combine.
  6. Return the mixture to the saucepan and cook gently, whisking constantly, until it thickens. Remove from the heat.
  7. Melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Whisk the melted chocolate into the mixture in the saucepan until well combined.
  8. Pour the chocolate filling into the prepared biscuit base.
  9. To make the meringue, whisk the egg whites in a large mixing bowl until they form soft peaks. Gradually whisk in about two-thirds of the caster sugar until the mixture becomes thick and glossy. Fold in the remaining sugar and vanilla essence.
  10. Spread the meringue over the chocolate filling, ensuring it covers the entire surface and reaches the edges of the crust.
  11. Bake the pie in the center of the oven for 30 minutes or until the meringue turns golden brown.
  12. Serve the Chocolate Meringue Pie warm to fully enjoy its lusciousness.

YIELD: Serves 6

SPECIAL INSTRUCTIONS:

  • Make sure to press the biscuit crust firmly into the tin or dish to create a sturdy base.
  • Whisk the egg whites until they form soft peaks, ensuring not to overwhisk them, as they can become dry.
  • It’s important to gradually add the sugar when making the meringue to ensure it dissolves properly and creates a stable mixture.
  • Serve the pie warm to fully appreciate the contrast between the warm filling and the fluffy meringue.

TIPS:

  • Allow the pie to cool slightly before serving to make slicing easier.
  • Garnish the pie with grated chocolate or chocolate shavings for an extra touch of elegance.
  • Serve the Chocolate Meringue Pie with a dollop of whipped cream or a drizzle of chocolate sauce for added indulgence.
  • Refrigerate any leftovers and consume within a few days for the best taste and texture.

In conclusion, Chocolate Meringue Pie is a delectable dessert that combines a crunchy biscuit crust, a luscious chocolate filling, and a fluffy meringue topping. This irresistible pie is the perfect treat for chocolate lovers and will surely impress your guests with its indulgent flavors and beautiful presentation.

To make the pie, a buttery biscuit crust is prepared using crushed digestive biscuits and melted butter. The crust provides a delightful contrast in texture to the rich and velvety chocolate filling.

The filling is made by whisking together egg yolks, sugar, cornflour, and milk until it thickens. Melted dark chocolate is then added, creating a smooth and decadent chocolate filling that oozes with flavor.

The meringue topping is created by whisking egg whites with sugar and vanilla essence until thick and glossy. The meringue is then spread over the chocolate filling, adding a light and airy element to the pie.

Once baked to perfection, the Chocolate Meringue Pie is best served warm, allowing the flavors to meld together and the meringue to have a slightly toasted finish. Each bite offers a delightful combination of textures and a harmonious blend of chocolate and sweetness.

Garnish the pie with grated chocolate or chocolate shavings for an extra touch of elegance. Serve it with a dollop of whipped cream or a drizzle of chocolate sauce to enhance the indulgence.

Whether enjoyed as a comforting dessert on a cozy evening or served as a show-stopping treat for a special occasion, Chocolate Meringue Pie is sure to satisfy your chocolate cravings and leave you wanting more.
