This is an easy, very flavorful pie. It is best made with fresh berries, but you can use frozen berries. For a great strawberry pie, make this recipe with fresh strawberries instead of blueberries. It’s very refreshing!
INGREDIENTS:
• 4 cups blueberries (2 pints)
• V3 cup honey
• V4 cup water
• 2 tablespoons cornstarch or arrowroot
• 2 tablespoons lemon juice
INSTRUCTIONS:
BLUEBERRY FILLING:
- Clean blueberries, and divide in half. Set 2 cups aside.
- Combine 2 cups berries, honey, water, cornstarch or arrowroot, and lemon juice in a saucepan, and stir well.
- Cook over medium heat, stirring frequently until thickened, approximately 10 minutes.
- Remove from heat. While mixture is still hot, stir in the remaining 2 cups blueberries.
- Cool.
ASSEMBLING THE PIE:
- When both shell and fruit mixture are cooled, spoon berries into pie shell.
- Refrigerate until serving time. Pie will set up as it chills.
SERVING SUGGESTIONS:
• Cover pie with sweetened whipped cream, or • Slice and serve with a dollop of cream on each slice.
