Drizzle this sweet, decadent glaze over cupcakes or muffins. The whiter the non-dairy milk you use, the whiter the glaze. Don’t stir in vanilla extract—it will lend the glaze a light brown tint.

MAKES ABOUT : 1/2 cup

INGREDIENTS:

  • 1 cup powdered (confectioner’s) sugar
  • 2 tablespoons plain unsweetened coconut milk beverage

 

INSTRUCTIONS:

  1. Measure out 1 cup of powdered sugar and 2 tablespoons of plain unsweetened coconut milk beverage.
  2. Combine the powdered sugar and coconut milk beverage in a small bowl.
  3. Use a whisk to mix the two ingredients together until the mixture is smooth and glossy.
  4. If the mixture seems too thick, add a little more coconut milk beverage, a teaspoon at a time, until you reach your desired consistency.
  5. Use the icing or glaze immediately, or store it in an airtight container in the refrigerator for up to a week.

This icing or glaze can be used to top cakes, cupcakes, cookies, or any other baked goods that could use a little sweetness and shine.
