INGREDIENTS:

  • 3 cups flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups sugar
  • 1 teaspoon cinnamon
  • 3 eggs
  • 1 cup oil
  • 2 cups mashed bananas (ripe)
  • 1 (8 ounce) can crushed pineapple with juice
  • 1 teaspoon vanilla
  • 1/2-1 cup chopped walnuts

INSTRUCTIONS:

  1. In a large bowl, combine the eggs, oil, and sugar. Blend them together until well mixed.
  2. Add the flour, salt, baking soda, cinnamon, mashed bananas, crushed pineapple (with its juice), and vanilla to the bowl. Mix all the ingredients together until they are thoroughly combined.
  3. Once the batter is well mixed, add the chopped walnuts and blend them in gently.
  4. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
  5. Grease a bread loaf pan to prevent the bread from sticking. Alternatively, you can line the pan with parchment paper.
  6. Pour the prepared batter into the greased or lined pan, spreading it evenly.
  7. Place the pan in the preheated oven and bake for approximately 1 hour. You can check if the bread is ready by inserting a toothpick into the center. If it comes out clean or with a few crumbs, the bread is done.
  8. Once fully baked, remove the pan from the oven and allow the bread to cool in the pan for a few minutes.
  9. After cooling slightly, transfer the banana bread to a wire rack to cool completely before slicing and serving.

VARIATIONS:

  • Chocolate Chip Banana Bread: Add a cup of chocolate chips to the batter for a rich and indulgent twist. The melted chocolate will create pockets of gooey goodness throughout the bread.
  • Nutella Swirl Banana Bread: Swirl Nutella into the batter before baking to create a delightful marbled effect. Simply spoon dollops of Nutella onto the batter and use a toothpick or a knife to gently swirl it around.
  • Blueberry Banana Bread: Fold in a cup of fresh or frozen blueberries to add a burst of tangy sweetness to your banana bread. The blueberries will provide a burst of color and fruity flavor.
  • Coconut Banana Bread: Stir in half a cup of shredded coconut to the batter to infuse it with a tropical taste. You can use sweetened or unsweetened coconut, depending on your preference.
  • Streusel Topping: Create a crumbly and crunchy topping for your banana bread by mixing together 1/2 cup of flour, 1/2 cup of brown sugar, 1/4 cup of softened butter, and a teaspoon of cinnamon. Sprinkle this mixture over the batter before baking.
