Baked seasoned fries are a delightful and healthier alternative to traditional deep-fried french fries. These fries are prepared with russet potatoes, which are known for their fluffy texture and ability to get crispy on the outside when baked. The seasoning blend adds a burst of flavor to each bite, making them a perfect side dish or snack.
The process begins by soaking the potato slices in cold water, which helps remove excess starch and results in a crispier texture. After coating the potatoes in canola oil and a flavorful mixture of garlic salt, onion powder, paprika, and cornstarch, they are baked to perfection. This baking method eliminates the need for excessive oil, making these fries a healthier choice.
Once out of the oven, these fries are given a final toss with dried parsley, salt, pepper, minced garlic, and vegan Parmesan cheese. This step enhances their taste and aroma, providing a satisfying and savory experience.

COOK TIME: 45 to 50 minutes
YIELD: 4 to 6 servings
INGREDIENTS:
- 4 to 5 russet potatoes, peeled and sliced into long, ½ to 1” (1.3- to 2.5-cm)-thick slices
- 2 tbsp (30 ml) canola oil, plus more for pan if needed
- 1 tsp Garlic Salt or store-bought
- 1 tsp onion powder
- 1 tsp paprika
- 1 tbsp (8 g) cornstarch
- 1 tsp dried parsley
- ½ tsp salt
- ⅛ tsp freshly ground black pepper
- 2 cloves garlic, peeled and minced, or 2 tsp (6 g) jarred minced garlic
- 2 tbsp (14 g) vegan Parmesan Cheese or vegan Mozzarella shreds, or store-bought (nut-free and/or soy-free if needed)
INSTRUCTIONS:
- Place the potato slices in a strainer and run under cold water for at least 30 seconds. Transfer to a large bowl and cover completely with cold water. Allow them to soak for 1 to 3 hours.
- Once the potatoes are done soaking, preheat the oven to 425°F (220°C). Oil a large baking sheet with canola oil or line it with parchment paper.
- Drain, rinse, and pat the potatoes dry, then place them in a large bowl. Add the canola oil and toss to coat evenly.
- In a small bowl, mix together the garlic salt, onion powder, paprika, and cornstarch. Pour over the potatoes and toss to coat evenly.
- Spread the potatoes evenly on the prepared baking sheet, making sure they are not overlapping or touching—you may need a second baking sheet if they don’t all fit. Bake for 40 to 45 minutes, or until your desired crispiness is reached, flipping halfway through. If desired, broil on high for 1 to 2 minutes, for extra crispiness.
- Once the fries are finished baking, transfer them to a large bowl and toss with the parsley, salt, pepper, garlic, and Parmesan until evenly coated. Serve immediately.
