INGREDIENTS:

  • 2 cups Fermented Eggplant
  • ½ cup tahini
  • 3 cloves garlic or 1 head roasted garlic
  • 1–2 tablespoons chopped fresh or fermented parsley
  • Pinch of salt
  • Olive oil
  • Smoked paprika

 

INSTRUCTIONS:

  1. In a food processor, combine the fermented eggplant, tahini, garlic, parsley, and a pinch of salt.
  2. Process the ingredients until they are well-blended and form a smooth purée. This will create a creamy and flavorful base for the dip.
  3. Transfer the dip to a shallow bowl for serving.
  4. Drizzle a small amount of olive oil over the dip as a garnish. This adds richness and a touch of flavor.
