MAKES: ABOUT 2 CUPS
INGREDIENTS:
- ¾ cup light rum
- ¼ cup dark rum
- 1 cup mango nectar
- 1 tablespoon vegetable oil or sunflower oil
- 1 tablespoon white vinegar
- 1 teaspoon kosher salt or coarse sea salt
- A few splashes of Caribbean hot sauce
INSTRUCTIONS:
- In a bowl, whisk together all of the ingredients until well combined. Alternatively, you can combine the ingredients in a large zipper-lock plastic bag.
- Use the marinade within a few hours for the best flavor. Cover the pork with the marinade, ensuring it’s fully coated, and let it sit for at least 30 minutes at room temperature to allow the flavors to penetrate the meat. For a more intense flavor infusion, you can also refrigerate the marinating pork, wrapped or covered, for a longer period, even up to overnight.
VARIATIONS:
- Spicy Kick: If you enjoy some heat in your dishes, add chopped fresh chili peppers or a dash of cayenne pepper to the marinade. This will give your pork a spicy twist that complements the sweetness of the mango.
- Citrus Zest: Enhance the tropical flavors by incorporating citrus zest into the marinade. Lemon, lime, or orange zest will add a bright and refreshing note to the mix.
- Ginger Infusion: For a touch of warmth and aromatic depth, grate some fresh ginger into the marinade. The ginger will infuse the pork with a delightful, slightly peppery flavor.
- Coconut Milk Creaminess: Replace some of the mango nectar with creamy coconut milk. The combination of rum, mango, and coconut will create a luscious and exotic marinade.
- Honey-Mango Glaze: Heat the marinade on the stovetop and reduce it to a thicker consistency to create a sweet and tangy glaze for basting the pork while cooking.
- Herbaceous Blend: Experiment with fresh herbs such as cilantro, basil, or mint. Finely chop the herbs and add them to the marinade for a burst of fresh, herbal goodness.
- Teriyaki Twist: Mix in a few tablespoons of soy sauce and brown sugar to the marinade to infuse it with a delicious teriyaki-like flavor profile.
- Pineapple Paradise: Swap the mango nectar for pineapple juice to create a tropical pineapple-rum marinade that works wonderfully with pork.
- Allspice Essence: Add a pinch of ground allspice to evoke the flavors of Caribbean cuisine, enhancing the overall tropical experience.
