INGREDIENTS:

 

For the Salad

  • 1 cup (154 g) corn (fresh [cooked], frozen [defrosted] or canned [drained and rinsed])
  • 1 cup (180 g) baby tomatoes, quartered
  • 2 cups (300 g) peeled, pitted and chopped avocado
  • ¼ cup (40 g) diced red onion (diced small)
  • 1 tbsp (1 g) chopped fresh cilantro leaves
  • 1 cup (172 g) black beans, drained and rinsed

 

For the Dressing

  • Juice of 1 lime (about 2 tbsp [30 ml])
  • 1 tbsp (15 ml) olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp freshly ground black pepper
  • ½ tsp salt

 

INSTRUCTIONS:

  1. In a large bowl, combine the corn, tomatoes, avocado, onion, cilantro, and black beans. Mix well and set aside.
  2. In a small bowl, whisk together all the dressing ingredients until well combined.
  3. Pour the dressing into the salad mixture and toss everything together thoroughly to ensure all the ingredients are coated with the dressing.
