Atomic Pickles are a delicious and tangy refrigerator pickle that is quick and easy to make. Unlike traditional canned pickles, these pickles are meant to be stored in the refrigerator and can be enjoyed within two weeks of preparation. This recipe, shared by my talented friend Jody Fijal, guarantees a burst of flavor in every bite.

To ensure the best quality pickles, it is important to use bottled water instead of tap water. Tap water often contains chlorine and unwanted minerals that can affect the taste and texture of the pickles. By opting for bottled water, you can ensure that your pickles maintain their crispness and refreshing flavor.

The combination of pickling spices, garlic, dill, vinegar, hot sauce, and a touch of cayenne pepper creates a tantalizing flavor profile that will leave your taste buds tingling. The pickles are initially left to marinate at room temperature for 24 hours, allowing the flavors to meld and develop. Afterward, they are refrigerated, allowing them to darken and intensify in flavor.

With its vibrant taste and crunchy texture, Atomic Pickles are the perfect accompaniment to sandwiches, burgers, or enjoyed as a zesty snack on their own. Let’s dive into the recipe and discover how to make these irresistible pickles.

INGREDIENTS:

  • 6 Kirby cucumbers
  • 2 tablespoons pickling spice
  • 3 garlic cloves, halved
  • 2 sprigs fresh dill
  • 3 cups bottled water
  • ½ cup distilled white vinegar
  • 2 tablespoons hot sauce
  • 2½ tablespoons kosher salt
  • ½ teaspoon cayenne pepper

PREPARATIONS:

  1. Arrange the cucumbers standing up in a sterilized jar.
  2. Add half of the pickling spice, half of the garlic, and half of the dill to the jar of cucumbers.
  3. In a large bowl, mix the water, vinegar, hot sauce, salt, and cayenne pepper. Stir until the salt is fully dissolved.
  4. Add the mixture from the bowl to the jar of cucumbers, along with the remaining pickling spice, garlic, and dill.
  5. Seal the jar and shake gently to blend the ingredients.
  6. Remove the lid and let the cucumbers sit at room temperature, uncovered, for 24 hours.

YIELD: MAKES 2 QUARTS

SPECIAL INSTRUCTIONS:

  • Taste the pickles after 24 hours and adjust the seasoning according to your preference.
  • Let the pickles stay on the counter, uncovered, until they darken, which may take up to 2 days.
  • Afterward, refrigerate the pickles. They can be stored in the refrigerator for up to 2 weeks.

TIPS:

  • Use bottled water to prevent unwanted flavors from tap water.
  • Sterilize the jar before adding the cucumbers to maintain the pickles’ freshness.
  • Feel free to adjust the level of heat by increasing or decreasing the amount of cayenne pepper and hot sauce.
  • Experiment with different varieties of cucumbers for a unique twist on the recipe.

In conclusion, Atomic Pickles are a fantastic addition to your culinary repertoire. With their vibrant flavors and delightful crunch, they elevate any meal to new heights. This refrigerator pickle recipe is incredibly versatile and can be enjoyed as a standalone snack, added to sandwiches, or served alongside your favorite savory dishes.

The use of bottled water ensures that the pickles retain their pure and unadulterated taste. The combination of pickling spices, garlic, dill, vinegar, hot sauce, and a hint of cayenne pepper creates a flavor explosion that will satisfy your taste buds. The initial marinating process allows the flavors to meld and intensify, resulting in pickles that are bursting with character.

It’s important to taste the pickles after the 24-hour marination period and adjust the seasoning to your liking. This allows you to personalize the flavor profile according to your preference. Additionally, leaving the pickles uncovered for up to 2 days on the counter before refrigeration allows them to develop a deeper color and more concentrated taste.

When it comes to serving Atomic Pickles, the possibilities are endless. They make a fantastic accompaniment to burgers, sandwiches, and charcuterie boards. Their tangy and zesty flavor pairs perfectly with a variety of cheeses, cured meats, and bread. You can also enjoy them on their own as a satisfying and healthy snack.

To take your pickling adventures even further, don’t be afraid to experiment with different types of cucumbers. Kirby cucumbers, with their small size and crisp texture, work wonderfully in this recipe. However, you can try using other varieties for a unique twist. Persian cucumbers, for example, offer a slightly sweeter flavor, while English cucumbers provide a milder taste.

In conclusion, Atomic Pickles are a simple yet spectacular way to preserve the flavors of fresh cucumbers. By following this recipe, you’ll be rewarded with pickles that are tangy, crunchy, and bursting with taste. So gather your ingredients, prepare your jars, and embark on a pickling adventure that will leave you savoring every mouthwatering bite.
