INGREDIENTS:

  • 8 eggs
  • 1/2 cup milk
  • 1 tablespoon fresh sage, roughly chopped
  • 1 teaspoon fresh thyme, chopped
  • 2 garlic cloves, chopped
  • 1/4 cup pecorino cheese, grated
  • 24 stalks asparagus
  • 2 tablespoons extra virgin olive oil

 

INSTUCTIONS:

  1. In a bowl, beat the eggs until well combined.
  2. Add the milk, fresh sage, fresh thyme, chopped garlic, and grated pecorino cheese to the bowl. Mix everything together until the ingredients are evenly distributed. Season the mixture with cracked black pepper to taste.
  3. In a large pan, layer the asparagus spears and add enough salted boiling water to cover them. Cook the asparagus for about 2 minutes until they become tender yet still retain some crunch. Drain the asparagus and set aside.
