INGREDIENTS:
- 8 ounces cremini or white mushrooms, cleaned, trimmed, and quartered if large
- ¼ cup extra-virgin olive oil
- Salt and freshly ground pepper
- 2 teaspoons balsamic vinegar, plus a few drops for drizzling
- 2 bunches arugula, trimmed and torn into bite-size pieces (about 6 cups)
- 2-ounce piece of Parmigiano-Reggiano for shaving
INSTRUCTIONS:
- Preheat the oven to 425°F (220°C).
- In a small baking pan, toss the mushrooms with 2 tablespoons of the olive oil, salt, and pepper to taste.
- Roast the mushrooms in the preheated oven until they are tender and lightly browned, approximately 15 minutes. Let them cool slightly.
- In a large bowl, whisk together the remaining 2 tablespoons of olive oil, 2 teaspoons of balsamic vinegar, and a pinch of salt and pepper to taste.
- Add the torn arugula to the bowl and toss well to coat the leaves with the dressing.
- Arrange the dressed arugula on four salad plates.
- Top the arugula with the roasted mushrooms.
- Drizzle a few drops of balsamic vinegar over each salad.
- Using a vegetable peeler, shave some of the Parmigiano-Reggiano over each salad.
