INGREDIENTS: 

  • 4 large cooking apples
  • ½ cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • ¼ teaspoon ground cinnamon
  • 1 (17.3-ounce) package puff pastry sheets
  • ½ cup confectioner’s sugar
  • 1 tablespoon water

 

INSTRUCTIONS:

  1. Peel, core, and slice the apples. In a medium saucepan over low heat, cook the apples with sugar, cornstarch, lemon juice, and cinnamon, stirring frequently, for 6–8 minutes until the apples are tender. Refrigerate the mixture until cool.
  2. Thaw the puff pastry sheets at room temperature for about 20 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Unfold the pastry sheets on a lightly floured surface. Roll each sheet into a 12″ square, then cut it into four 6″ squares.
  5. Place ¼ cup of the cooled apple mixture in the center of each square. Brush the edges of the pastry with water. Fold the squares to form triangles and seal the edges firmly with a fork.
