This recipe is for a delicious and easy-to-make fruit crisp that can be enjoyed any time of the year. Crisps are a classic dessert that combines sweet, juicy fruit with a crunchy, buttery topping. The great thing about this recipe is that you can use a variety of fruits, such as apples, pears, stone fruits, berries, or a combination, depending on what you have on hand or what is in season. The fruit is lightly sweetened and spiced with cinnamon, then topped with a crumbly mixture of oats, flour, butter, and other optional ingredients like coconut and nuts. The result is a warm and comforting dessert that pairs perfectly with a scoop of ice cream or a dollop of whipped cream.

MAKES: 6 to 8 servings

TIME: About 1 hour

INGREDIENTS:

  • 6 cups peeled, cored, and sliced apples or other fruit
  • 1 teaspoon ground cinnamon
  • Juice of 1/2 lemon
  • 2/3 cup brown sugar, or to taste
  • 5 tablespoons cold unsalted butter, cut into bits, plus some for the pan
  • 1/2 cup rolled oats (not instant)
  • 1/2 cup all-purpose flour
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup chopped nuts (optional)
  • Dash of salt

INSTRUCTIONS:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the fruit with half of the cinnamon, the lemon juice, and 1 tablespoon of the brown sugar until well coated. Spread the fruit mixture in a lightly buttered 8-inch square or 9-inch round baking pan.
  3. In a food processor, combine all the other ingredients, including the remaining cinnamon and brown sugar. Pulse a few times to mix everything together, then process for a few seconds more until the mixture is well incorporated but not completely uniform. If you don’t have a food processor, you can also mix the ingredients by hand. Soften the butter slightly, toss together the dry ingredients, then work in the butter with your fingertips, a pastry blender, or a fork.
  4. Crumble the topping mixture evenly over the fruit in the baking pan.
  5. Bake in the preheated oven for 30 to 40 minutes, or until the topping is golden brown and the fruit is tender and bubbling.
  6. Remove from the oven and let it cool for a few minutes. Serve the fruit crisp hot, warm, or at room temperature.
  7. For an extra treat, serve the crisp with a scoop of vanilla ice cream or a dollop of whipped cream.

TIPS:

  • Experiment with different fruit combinations to create unique flavors. Mix and match apples with berries, or try a combination of peaches and plums for a delightful twist.
  • Adjust the sweetness level to your preference by adding more or less brown sugar. Taste the fruit mixture before baking and adjust accordingly.
  • If using watery fruits like berries, toss them with a tablespoon or two of flour or cornstarch before baking. This will help thicken the juices and prevent a soggy crust.
  • For a more pronounced coconut flavor, use sweetened shredded coconut instead of unsweetened.
  • Feel free to add your favorite nuts to the topping mixture for extra crunch and flavor. Chopped almonds, pecans, or walnuts work well.
  • Serve the fruit crisp warm or at room temperature. If you have leftovers, store them in the refrigerator and reheat before serving.
  • To make the dish even more indulgent, top it with a scoop of vanilla ice cream or a dollop of whipped cream just before serving.
  • If you don’t have a food processor, you can mix the topping ingredients by hand. Simply soften the butter slightly, combine the dry ingredients in a bowl, and work in the butter using your fingertips, a pastry blender, or a fork.
  • Make sure to use rolled oats and not instant oats for the best texture and flavor in the topping.
  • Don’t be afraid to get creative with the topping. If you prefer a different texture or flavor, try variations like Streusel Topping or add your own twist with spices like nutmeg or cardamom.
  • Feel free to scale the recipe up or down based on your needs. Just adjust the quantities of the ingredients accordingly while maintaining the ratio.

Enjoy this delightful fruit crisp as a comforting dessert on its own or add your favorite toppings for an extra indulgent treat. The combination of the sweet, juicy fruit and the crispy, buttery topping is sure to satisfy your cravings. Whether you’re entertaining guests or simply treating yourself, this recipe is a perfect choice.
