INGREDIENTS:

  • 4g Kanten powder
  • 1 teaspoon matcha powder
  • 3 tablespoons sugar
  • 1-2 tablespoons azuki bean paste (Anko)

 

For the Syrup:

  • 50-80ml water
  • 2 tablespoons sugar

 

INSTRUCTIONS:

  1. In a shallow saucepan or bowl, combine the matcha powder and 3 tablespoons of sugar, and set this mixture aside.
  2. In a saucepan, combine 400ml of water, the Kanten powder, and the matcha syrup mixture. Place the saucepan over medium-high heat and stir constantly.
  3. Stir occasionally until all the ingredients have dissolved and the mixture comes to a boil.
  4. Turn off the heat and let the mixture cool for ten minutes.
  5. Pour the mixture into a container, filling it halfway, and refrigerate for 2-3 hours or until it sets.
  6. To prepare the syrup, combine 50-80ml of water and 2 tablespoons of sugar in a saucepan. Cook over medium heat until the sugar is completely dissolved.
  7. Allow the sugar syrup to cool after it has melted.
  8. Once the matcha jelly has set, cut it into pieces and place them in a serving dish. Top the jelly with azuki bean paste (Anko).
  9. Pour the syrup over the matcha jelly and Anko.
  10. Serve your Anmitsu chilled, and enjoy this delightful Japanese dessert!
