MAKES: ABOUT ¾ CUP

  • ¼ cup minced celery ribs
  • 2 to 3 tablespoons chopped fresh sage
  • 2 tablespoons chopped celery leaves or fresh flat-leaf parsley
  • 2 teaspoons olive oil

 

INSTRUCTIONS:

  1. In a small bowl, combine the coarsely chopped Marcona almonds, minced celery ribs, chopped fresh sage, chopped celery leaves or parsley, and olive oil.
  2. Stir the ingredients together until well mixed.
  3. The gremolata mixture can sit at room temperature for about 1 hour before serving.
  4. Serve the gremolata spooned alongside vegetables.
