CAN YOU EVER have enough recipes for enjoying tofu? This one is very easy—a no-brainer. The roasted tofu is tasty enough to eat as it is—my kids will snack on roasted tofu straight out of the refrigerator. It also makes a superior base for a feast of roasted mushrooms—just pile the mushrooms on top of the roasted tofu. You can also cut the tofu into cubes and add them to a stir-fry.

SERVES: 4 TO 6

INGREDIENTS:

  • 2 pounds extra-firm or firm tofu
  • 1 tablespoon soy sauce
  • 1 tablespoon toasted sesame oil or peanut oil

 

INSTRUCTIONS:

  1. Preheat the oven to 425°F. Lightly oil a rimmed baking sheet.
  2. Wrap the tofu in paper towels and squeeze gently to remove excess moisture. Cut each block horizontally into three ½-inch-thick slices.
  3. Combine the soy sauce and oil and brush on both sides of the tofu slices. Arrange on the baking sheet.
  4. Roast for about 15 minutes, until lightly browned on both sides, turning once.
  5. Serve hot
