YIELD: 2 cups
INGREDIENTS:
- 2 cups fresh basil leaves, washed and patted dry
- 4 good-size garlic cloves
- 1 cup shelled walnuts or pine nuts
- 1 cup extra-virgin olive oil
- 1 cup freshly grated Parmesan cheese
- 1/4 cup freshly grated Romano cheese
- Salt and pepper to taste
INSTRUCTIONS:
- Combine the basil, garlic, and nuts, and chop in a food processor with the S blade. Leave the motor running, and add the olive oil in a slow steady stream.
- Shut off the food processor, and add the Parmesan, Romano, a big pinch of salt, and a liberal grinding of pepper. Process briefly to blend.
PER SERVING:
- Each 1-tablespoon serving will have 1 gram of carbohydrates, a trace of fiber, and 2 grams of protein.
