INGREDIENTS:
- 4 hard-boiled eggs, chopped
- 1 rib celery, diced
- 5 or 6 scallions, sliced
- 1/2 green pepper, diced
- 1/3 cup mayonnaise
- 1/2 teaspoon prepared mustard
INSTRUCTION:
- Combine all the ingredients, and serve on lettuce.
PER SERVING:
- 7 grams of carbohydrates and 2 grams of fiber, for a total of 5 grams of usable carbs and 14 grams of protein.
