YIELD: 3 servings
INGREDIENTS:
- 3 tablespoons butter
- 1 tablespoon curry powder
- 1 clove garlic
- 1 large onion
- 1 pound lean lamb, cut in 1/2-inch cubes
- Salt and pepper
INSTRUCTIONS:
- Melt the butter in a heavy skillet over medium heat.
- Add the curry powder, and stir for a minute or so.
- Add the garlic, onion, and lamb.
- Saute, stirring frequently, for 7 minutes or so, or until the lamb is done through.
- Salt and pepper to taste, and serve.
PER SERVING:
- 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 31 grams of protein.
