YIELD: 3 servings

INGREDIENTS:

  • 3 tablespoons butter
  • 1 tablespoon curry powder
  • 1 clove garlic
  • 1 large onion
  • 1 pound lean lamb, cut in 1/2-inch cubes
  • Salt and pepper

 

INSTRUCTIONS:

  1. Melt the butter in a heavy skillet over medium heat.
  2. Add the curry powder, and stir for a minute or so.
  3. Add the garlic, onion, and lamb.
  4. Saute, stirring frequently, for 7 minutes or so, or until the lamb is done through.
  5. Salt and pepper to taste, and serve.

 

PER SERVING:

  • 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 31 grams of protein.
