  • 1 dried or fresh chile, seeded, or more to taste
  • 1-inch fresh ginger, more or less, roughly chopped
  • About 1 1/2 pounds shrimp, peeled
  • 1/4 cup roughly chopped shallot, scallion, or red onion
  • 1/4 cup roughly chopped red or yellow bell pepper (optional)
  • Salt and freshly ground black pepper
  • 1/2 cup fresh cilantro leaves, or to taste
  • Neutral oil, like grapeseed or corn, as needed
  • Toasted buns (optional)
  • Lime wedges or ketchup for serving

 

INSTRUCTIONS:

  1. Heat a charcoal or gas grill or the broiler until moderately hot, placing the rack about 4 inches from the heat source. If pan-cooking, wait until the burgers are formed to proceed.
  2. In a food processor, combine the garlic, chile, ginger, and one-third of the shrimp. Process into a purée, scraping down the sides of the container as necessary. Add the remaining shrimp, shallot, bell pepper (if using), salt, pepper, and cilantro. Pulse the mixture until the shrimp is chopped to your desired texture, making sure not to over-process. Shape the mixture into four burger-like patties.
  3. Lightly brush the grill or patties with oil. Place the patties on the grill or under the broiler. If pan-cooking, heat the pan with oil and add the burgers.
