INGREDIENTS:

  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 1 bunch green onions, chopped
  • 2 cloves garlic, minced
  • 2 pounds spinach, rinsed and chopped
  • 1/2 cup chopped fresh parsley
  • 2 eggs, lightly beaten
  • 1/2 cup ricotta cheese
  • 1 cup crumbled feta cheese
  • 8 sheets phyllo dough
  • 1/4 cup olive oil

 

INSTRUCTIONS:

  1. Start by preheating your oven to 350 degrees and generously coat a baking pan with nonstick spray.
  2. In a pan, heat 3 tablespoons of olive oil over medium heat. Add chopped onions, green onions, and minced garlic. Sauté for 4 minutes until they become tender and fragrant. Then, add chopped parsley and spinach to the mixture, cooking for an additional 3 minutes. Remove the cooked contents from the pan.
  3. In a bowl, combine the cooked onion and spinach mixture with crumbled feta cheese, ricotta cheese, and lightly beaten eggs.
  4. Lay out a sheet of phyllo dough and brush it with olive oil. Place another sheet on top and repeat the process until you’ve used four sheets in total.
  5. Add the spinach and cheese mixture on top of the layered phyllo sheets, then fold the phyllo dough around the filling to seal it.
  6. Place the prepared pastry in the baking pan.
  7. Repeat the phyllo layering process with the remaining four sheets, brushing each with olive oil.
  8. Carefully lay this second stack of phyllo sheets over the spinach filling in the pan.
