This recipe literally takes 5 minutes to whip up. It has all the workings of classic coleslaw, but none of the egg or dairy. If you’d like, you can replace the coleslaw mixture with 1¼ cups (113 g) of shredded carrot and 4 cups (340 g) of shredded cabbage.   • 1 tbsp (12 g) granulated sugar
  • 1 tbsp (15 ml) lemon juice
  • 1 tbsp (15 ml) white vinegar
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 (16-oz [453-g]) bag coleslaw mixture (pre-shredded cabbage and carrots)

 

INSTRUCTIONS:

  1. In a large bowl, whisk together the vegan mayo, granulated sugar, lemon juice, white vinegar, salt, and freshly ground black pepper until well combined.
  2. Add the coleslaw mixture (pre-shredded cabbage and carrots) to the bowl.
  3. Stir the coleslaw mixture into the dressing until it’s thoroughly coated with the creamy dressing. Make sure the cabbage and carrots are evenly distributed throughout.
  4. Your Creamy Vegan Coleslaw is now ready to serve. You can enjoy it immediately, or for even better flavor, chill it in the refrigerator until you’re ready to serve. It’s often recommended to let it chill for a few hours or even overnight to allow the flavors to meld together.
