INGREDIENTS:
- 3 tbsp (45 ml) olive oil, plus more for pan
- 2 tsp (8 g) Garlic Salt or store-bought
- 1 tsp dried parsley
- 1 tsp onion powder
- 1 tbsp (0.2 g) dried chives
- 2 tbsp (10 g) nutritional yeast
- 1 lb (453 g) baby potatoes, quartered or halved (about 4 cups)
- 5 cloves garlic, peeled and minced, or 5 tsp (13 g) jarred minced garlic
- Salt and freshly ground black pepper
For serving (optional)
- Dried or finely chopped fresh chives
- Dried or finely chopped fresh parsley
INSTRUCTIONS:
- Preheat the oven to 400°F (200°C) and oil a large baking sheet with olive oil.
- In a large bowl, stir together the olive oil, garlic salt, parsley, onion powder, chives, and nutritional yeast. Add the baby potatoes and toss to coat them evenly with the seasoned oil mixture.
- Spread the potato mixture evenly on the prepared baking sheet.
- Bake for 35 minutes, stirring at the 20-minute mark to ensure even cooking.
- Remove from the oven, stir in the minced garlic, and return the baking sheet to the oven for about 3 more minutes, or until the potatoes reach your desired level of crispiness.
- Season with salt and freshly ground black pepper to taste.
