  2. In a well-heated pressure cooker, combine the butter (or vegan margarine) and olive oil. Allow them to melt together, creating a flavorful base for the dish. Once the fats are hot and shimmering, add the diced onion to the cooker. Sauté the onion for approximately 3 minutes, or until it becomes translucent and fragrant.
  3. With the onion nicely sautéed, it’s time to introduce the star of the show—our diced fennel. Add the fennel pieces to the pressure cooker, and sauté them for an additional 3 minutes. This step allows the fennel to absorb the aromatic flavors from the butter, olive oil, and onion, enhancing its overall taste.
