Chilaquiles, pronounced “chill-uh-KILL-ehs,” are a beloved and hearty breakfast dish in Mexico. However, their deliciousness knows no bounds, making them a perfect option for brunch. This dish is not only flavorful but also quick to assemble, making it an excellent choice when you need a satisfying and comforting meal in minutes. In this recipe, tortilla chips are softened and simmered in a flavorful sauce, creating a delightful, soupy concoction that’s perfect for serving with optional fried eggs, a dollop of sour cream, and a garnish of fresh cilantro.

Serves: 2

INGREDIENTS:

  • 4 cups tortilla chips (any color)
  • 2 cups vegetable stock
  • 1 cup New Mexico Chili Sauce or spicy tomato sauce
  • 4 large eggs (optional)
  • 2 tablespoons sour cream or Tofu Sour Cream
  • Chopped cilantro

INSTRUCTIONS:

  1. To begin, ensure you have all the necessary ingredients ready to go.
  2. Place the tortilla chips in a large skillet. You can use tortilla chips of any color or variety you prefer.
  3. Pour 1 cup of vegetable stock over the tortilla chips in the skillet.
  4. Add the New Mexico Chili Sauce or spicy tomato sauce to the skillet. These sauces will infuse the tortilla chips with a rich and spicy flavor.
  5. Over high heat, bring the mixture to a boil. Once boiling, reduce the heat to a simmer. If the mixture becomes too thick during cooking, you can add more vegetable stock as needed to maintain a soupy consistency.
  6. Continue simmering the tortilla chips in the flavorful sauce until they are well softened. You want them to be tender but not mushy. This should take a few minutes.
  7. If you desire, you can prepare fried eggs to accompany your chilaquiles. In a separate pan, melt a little butter and fry the eggs to your preferred doneness.
  8. Once the tortilla chips have softened to your liking and the sauce has soaked into them, it’s time to serve your chilaquiles.
  9. Divide the chilaquiles evenly between two plates.
  10. If you prepared fried eggs, place them on top of the chilaquiles on each plate.
  11. Add a generous dollop of sour cream or Tofu Sour Cream to each serving. The creamy coolness of the sour cream balances the spiciness of the dish.
  12. Finish your chilaquiles by sprinkling chopped cilantro over the top. Cilantro adds a fresh and herbaceous note to the dish.
  13. Now that your chilaquiles are ready, it’s time to dig in! Whether you’re savoring them for breakfast or brunch, this dish offers a delightful combination of textures and flavors that will leave you satisfied and content.

Chilaquiles, with their softened tortilla chips bathed in a flavorful sauce, are a delicious and comforting Mexican dish that can be enjoyed any time of day. Customize them with fried eggs, sour cream, and fresh cilantro to your liking, and savor a taste of Mexico’s culinary heritage. Enjoy your homemade chilaquiles!
