INGREDIENTS:

  • 1/2 cup sugar
  • Juice of 1 lemon
  • 6 ripe red plum tomatoes, seeded and roughly chopped
  • 6 ripe yellow plum tomatoes, seeded and roughly chopped
  • 1/2 cup finely diced red onion
  • 1/2 cup fresh cilantro, roughly chopped (optional)

 

INSTRUCTIONS:

  1. To begin, gather all the necessary ingredients and equipment.
  2. In a medium saucepan, combine 1/2 cup of sugar with 1/2 cup of water. Place the saucepan over high heat and start cooking. Allow the mixture to cook until the water evaporates, and the sugar begins to melt and turn a golden brown color. This process caramelizes the sugar, creating a rich sweetness.
  3. Squeeze the juice of 1 lemon into the caramelized sugar mixture. The lemon juice not only adds a delightful tang but also helps stop the cooking process of the sugar, preventing it from burning.
  4. Add the roughly chopped red and yellow plum tomatoes to the saucepan. These tomatoes will infuse the chutney with vibrant colors and fresh flavors.
  5. Toss in the finely diced red onion as well. Red onion adds a pleasant crunch and a touch of sharpness to the chutney.
  6. Now, it’s time to simmer the chutney, but not for long. Allow the mixture to simmer for no more than 5 minutes. The goal here is to warm the tomatoes and onions without overcooking them. We want to retain their freshness and texture.
  7. Once the quick simmer is complete, remove the saucepan from the heat.
  8. To remove excess water released from the warmed tomatoes, place a colander over a bowl or in the sink. Carefully pour the chutney into the colander, allowing the liquid to drain out. This step helps achieve the desired consistency for the chutney.
  9. If you’re using fresh cilantro to enhance the chutney’s flavor and aroma, now is the time to stir in the roughly chopped cilantro. Cilantro adds a refreshing herbal note to the chutney.
