To add a smoky and flavorful touch, slab bacon is cut into matchstick-sized pieces and sprinkled over the top. Once baked to perfection, this tart is ready to be enjoyed immediately. Let’s dive into the recipe:

INGREDIENTS:

The dough:

  • 2 ½ teaspoons, or 1 package, dry yeast
  • 2 ¼ to 2 ½ cups unbleached flour
  • 1 cup lukewarm water
  • 1 teaspoon salt

The topping:

  • 1 cup cottage cheese or ricotta
  • 1 cup creme fraiche or sour cream
  • 2 medium onions, sliced into thin rounds
  • Salt and freshly ground black pepper to taste
  • 12 ounces slab bacon, rind removed, cut into matchstick-size pieces

INSTRUCTIONS:

  1. Combine the water, yeast, and one cup of flour in a large mixing bowl. Stir until thoroughly blended and set aside to proof the yeast, about five minutes.
  2. Once proofed, add the salt, then gradually add the remaining flour until the dough becomes too stiff to stir. Transfer the dough to a lightly floured work surface and start kneading, adding additional flour if necessary to prevent stickiness. Knead for approximately 10 minutes until the dough becomes smooth and satiny.
  3. Place the kneaded dough in a bowl, cover it, and let it rise at room temperature until it doubles in size, which takes about one hour.
  4. Punch down the dough and let it rise again, covered, until it doubles in size once more, approximately one hour.
  5. Preheat the oven to 450 degrees Fahrenheit (230 degrees Celsius).
  6. In a bowl, combine the sliced onions, cottage cheese or ricotta, creme fraiche or sour cream, salt, and pepper. Allow the mixture to sit for 15 minutes to soften the onions.
  7. Roll out the dough on a lightly floured surface into a rectangle that fits a large baking sheet, measuring approximately 12 1/2 by 15 inches. Transfer the rolled dough onto the baking sheet.
  8. Spread the onion mixture evenly over the dough, ensuring it reaches the edges. Sprinkle the bacon pieces evenly on top, and generously season with black pepper.
  9. Bake the tart in the preheated oven for 15 to 20 minutes or until the dough becomes crisp.
  10. Serve the Onion and Bacon Tart immediately, and enjoy its delicious flavors.
