INSTRUCTIONS

For the Apricot Upside-Down Cake:

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch round cake pan (preferably one with 2-inch high sides), melt 1/2 cup of unsalted butter over low heat.
  3. Once the butter has melted, add the packed brown sugar and stir constantly until the mixture becomes smooth and caramelized, typically for about 2-3 minutes.
  4. Remove the cake pan from heat and carefully arrange the sliced apricots in a single layer over the caramelized sugar-butter mixture. You can create a decorative pattern with the apricots if desired. Set the pan aside.
  5. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  6. In a separate mixing bowl, cream together the softened 1/2 cup of unsalted butter and granulated sugar until the mixture becomes light and fluffy, typically about 2-3 minutes.
  7. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  8. Gradually add the dry mixture to the wet mixture, alternating with the 1/2 cup of whole milk. Begin and end with the dry ingredients. Mix until just combined, being careful not to overmix, which can make the cake tough.
  9. Carefully pour the cake batter over the apricots in the cake pan, spreading it evenly.
  10. Place the cake pan in the preheated oven and bake for approximately 35-40 minutes, or until a toothpick inserted into the center comes out clean and the cake is golden brown.
  11. Remove the cake from the oven and let it cool in the pan on a wire rack for about 10 minutes.

 

To Serve:

  1. Place a serving platter or large plate over the cake pan.
  2. Using oven mitts or a kitchen towel, hold the cake pan and platter together and quickly flip them over to release the cake onto the platter. The caramelized apricots will now be on top.
