  • 1 large or 2 small beets (about 8 ounces), boiled until tender, peeled
  • 1 ripe Florida avocado, peeled and cut into 1-inch wedges

 

INSTRUCTIONS:

  1. Soften and lightly brown the tortillas by placing them directly over the burner of a gas stove. Flip them until the surface blisters slightly. Alternatively, you can steam, broil, or toast them for about a minute until they become soft.
  2. Spread approximately 1/2 tablespoon of vegan mayonnaise or sour cream into a line across the center of each tortilla.
  3. Spoon approximately 1/2 cup of Succotash Salad onto each tortilla.
  4. Halve the beets, and cut the halves into 1/8-inch slices. Divide the beet slices and avocado wedges evenly among the tortillas, placing them on the side of the succotash line closest to you.
  5. Place one of the tortillas on a work surface directly in front of yourself. Fold the near edge of the tortilla over the fillings and roll it, jelly-roll fashion, away from yourself. Keep even pressure to ensure a tight roll. Place seam-side down on a plate.
  6. Repeat the rolling process with the remaining tortillas.
