  • 8 oz (1 cup) mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

 

For the Strawberry Jam Filling:

  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

 

For the Strawberry Mascarpone Frosting:

  • 1 cup fresh strawberries, hulled and pureed
  • 1 cup unsalted butter, softened
  • 8 oz (1 cup) mascarpone cheese
  • 6 cups powdered sugar
  • 1 teaspoon vanilla extract

 

INSTRUCTIONS

For the Cake Layers:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.
  3. In a separate large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, which should take about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry mixture to the wet mixture, alternating with the buttermilk, beginning and ending with the dry mixture. Mix until just combined.

  1. In a saucepan, combine the chopped strawberries, granulated sugar, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens to a jam-like consistency (about 10-15 minutes).
  3. Remove from heat and let it cool.

 

For the Strawberry Mascarpone Frosting:

  1. Puree the hulled strawberries in a blender or food processor until smooth.
  2. In a mixing bowl, cream the softened butter and mascarpone cheese together until smooth.
  3. Gradually add the powdered sugar, one cup at a time, mixing well after each addition.

Assembly:

  1. Place one of the cooled cake layers on a serving platter.
