INGREDIENTS:

For the Tangzhong:

For the Rest of the Loaf:

  • 3 tablespoons sugar
  • 1 egg
  • 30g unsalted butter
  • 1 teaspoon salt
  • 2 teaspoons fast-acting yeast
  • 120 ml milk (½ cup)
  • 300g bread flour

 

INSTRUCTIONS:

Prepare the Tangzhong:

  1. In a shallow saucepan, combine the water and bread flour for the Tangzhong.
  2. Mix until smooth, ensuring there are no lumps.
  3. Gently heat the flour mixture over medium-low heat while continuously stirring until it thickens. You’ll notice trails forming as you swirl it.
  4. Remove the pan from heat and set it aside to cool.

 

Combine Ingredients for the Rest of the Loaf:

  1. In a large mixing bowl, combine the remaining ingredients: milk, yeast, bread flour, sugar, melted butter, salt, and egg.
  2. Add the cooled Tangzhong to this mixture.
  3. Mix all the components in a stand mixer or by hand on a clean surface, kneading until the dough becomes smooth. Add more flour if necessary.

 

Rising:

  1. Transfer the dough to a well-oiled bowl to prevent sticking.
  2. Cover the bowl and let the dough rise in a warm place until it has doubled in size, which typically takes about 1 hour.

 

Divide and Fold:

  1. Once the dough has risen, punch it down and divide it into three equal parts.
  2. Set aside two pieces and work with one piece.
  3. Stretch one portion of the dough halfway over the remaining dough, and then fold the other half on top, creating three layers.
  4. Gently shape the dough into a ball, and if necessary, lightly dust with flour.
  5. Roll up the dough like a cinnamon roll.
  6. Repeat the process for the remaining pieces.

 

Final Rise and Preheat Oven:

  1. Cover the bread and let it rise until it’s just above the rim of the baking pan.
  2. Preheat your oven to 350°F (175°C).

 

Egg Wash and Bake:

  1. Brush the top of the bread with an egg wash, created by lightly beating an egg.
  2. Bake the loaf in the preheated oven for approximately 30 minutes or until it turns lightly brown.
  3. If it starts to brown too quickly, you can tent it with parchment paper for the last few minutes of baking.

 

Cool and Enjoy:

  1. Allow the bread to cool on a wire rack before slicing and serving.
