INGREDIENTS:

  • 3 cups Foxtail Millet
  • 1 cup Urad Dal
  • ¼ tablespoon Fenugreek Seeds
  • Oil (for greasing)

INSTRUCTIONS:

  1. Soaking: Rinse and soak the foxtail millet and urad dal separately in water for about 6 hours. You can also add fenugreek seeds to the urad dal while soaking.
  2. Grinding: Grind the soaked urad dal and fenugreek seeds into a fine paste separately. Transfer them to a bowl. Next, grind the soaked foxtail millet into a smooth batter using the same blender. Combine it with the urad dal batter.
  3. Fermentation: Mix the two batters well and let them ferment overnight. After fermentation, stir in salt to taste.
  4. Preparing Idlis: Grease the idli plates with a little oil and fill each mold with the prepared batter. Steam the idlis for about 10 minutes on medium-low heat.
  5. Cool and Serve: Allow the idlis to cool slightly, then sprinkle a little water over them to make it easier to remove them from the molds. Serve hot with your favorite chutney or sambar.
  6. Preparing Dosas (Optional): If you have leftover batter, you can use it to make dosas. Adjust the batter’s consistency with water to your liking and spread it evenly on a hot dosa tawa. Cook until it turns golden brown, flip, and cook the other side.
