  • 1 tbsp chopped flat-leaf parsley
  • Salt and freshly ground black pepper

 

INSTRUCTIONS:

  1. Slice the leek and rinse it well to remove any dirt or grit.
  2. Slice the potatoes, large carrots, and small sweet potatoes into thin rounds, approximately 1/8 inch (3 mm) thick.
  3. In a large saucepan, heat the olive oil and butter over medium heat.
  4. Add the sliced leeks and cook, stirring frequently, for 3–4 minutes or until they become soft.
  5. Add the sliced potatoes, carrots, and sweet potatoes to the saucepan, and continue to cook, stirring, for an additional 1 minute.
  6. Pour in the hot vegetable stock.
  7. Bring the mixture to a boil, then cover the saucepan with a lid and reduce the heat to a simmer.
  8. Let the soup simmer for about 20 minutes, or until the vegetables are tender but not overly soft.
  9. Transfer about one-third of the cooked vegetables to a blender or food processor, along with a bit of the cooking liquid.
  10. Blend until you achieve a smooth puree, then return this mixture to the saucepan.
  11. Stir in the chopped flat-leaf parsley.
  12. Season the soup to taste with salt and freshly ground black pepper.
  13. Serve the soup with the vegetables mounded together in the center of each bowl.
