INGREDIENTS:

  • 1 small head cauliflower, chopped
  • ½ onion, diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons butter or vegan margarine
  • 4 cups Vegetable Broth
  • Zest of ½ lemon

 

INSTRUCTIONS:

  1. In a 4-quart slow cooker, combine all the ingredients except for the lemon zest. Cover and cook on low for 6 hours.
  2. Turn off the slow cooker and let the soup cool for about 10 minutes.
  3. Using a blender or immersion blender, process the soup until it becomes wonderfully smooth.
  4. Return the soup to the slow cooker, add the lemon zest, and gently heat until it’s wonderfully warm.
