INGREDIENTS:

  • 8 packed cups (19 oz [540 g]) chopped romaine lettuce
  • 2 tbsp (20 g) chopped red onion (chopped small)
  • ¾ cup (135 g) cherry tomatoes, quartered
  • 1 avocado, peeled, pitted and diced
  • 2 tbsp (5 g) chopped fresh cilantro leaves
  • 1 (15-oz [425-g]) can black beans, drained and rinsed
  • ¾ cup (116 g) corn (fresh [cooked], frozen [defrosted] or canned [drained and rinsed])
  • ½ cup (120 ml) Chipotle Ranch, plus more for topping if desired
  • ½ batch Easy Taco “Meat” (gluten-free and/or nut-free if needed)
  • ½ cup (14 g) broken tortilla chips, plus more for topping

 

INSTRUCTIONS:

  1. In a large bowl, combine the chopped romaine lettuce, chopped red onion, quartered cherry tomatoes, diced avocado, chopped cilantro, drained and rinsed black beans, and corn. Toss all these ingredients together until well mixed.
  2. Add the Chipotle Ranch dressing to the salad and toss once more. Ensure that the dressing coats all the ingredients evenly, giving your salad a rich and smoky flavor.
  3. Now, add the Easy Taco “Meat” to the salad. This adds a savory, spiced element to the dish that complements the freshness of the vegetables. Lightly toss to distribute the taco “meat” throughout the salad.
  4. Finally, sprinkle the broken tortilla chips over the top of the salad. These chips provide a satisfying crunch and an authentic taco salad experience.
