INGREDIENTS

For the Muffin Batter:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup honey
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

For the Honey Glaze (optional but delightful):

  • 2 tablespoons honey
  • 1 tablespoon hot water

INSTRUCTIONS

1. Preheat your oven:

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease each muffin cup.

2. Make the Muffin Batter:

  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and the ground spices (cinnamon, nutmeg, and cloves). Set aside.
  • In another large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the honey, buttermilk, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Be careful not to overmix; a few lumps are okay.

3. Fill the Muffin Cups:

  • Spoon the muffin batter into each muffin cup, filling them about 2/3 full.

4. Bake:

  • Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

5. Make the Honey Glaze (optional):

  • In a small bowl, whisk together the 2 tablespoons of honey and 1 tablespoon of hot water until smooth.

6. Glaze the Muffins (optional):

  • Once the muffins are out of the oven, brush the honey glaze over the tops of the muffins while they are still warm. This adds a delightful extra touch of honey sweetness.

7. Cool and Serve:

  • Allow Grandma’s Honey Muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Grandma’s Honey Muffins are a testament to the simple yet timeless pleasure of homemade baked goods. These muffins, with their delicate sweetness and warm spices, are a lovingly preserved tradition that can bring comfort and joy to your family.
