  • 1 cup Pressure Cooker Vegetable Stock or water
  • 2 cups Béchamel Sauce (see recipe in this chapter)
  • Salt and pepper, to taste

 

INSTRUCTIONS:

  1. Begin by grinding the cashews in a food processor or coffee grinder until they turn into a fine powder. Set the ground cashews aside for later use.
  2. In your pressure cooker, add the white wine over medium heat and bring it to a simmer. Allow the wine to reduce by half, which intensifies its flavor.
  3. Stir in the ground cashews, milk (or soymilk), Pressure Cooker Vegetable Stock (or water), and Béchamel Sauce. These ingredients will combine to create a creamy and rich Cashew Cream Sauce.
  4. Lock the pressure cooker lid into place and bring it to low pressure. Maintain this pressure for 5 minutes, then allow the pressure to release naturally. Once the lid is safely removed, continue to cook the sauce over low heat until it reduces by half. This reduction process enhances the sauce’s thickness and flavor.
