INGREDIENTS:

  • 1 16-ounce package extra-firm tofu
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 cup water
  • ½ onion, diced
  • 1 cup broccoli, blanched and chopped
  • ½ green bell pepper, chopped
  • ½ zucchini, chopped
  • ½ cup yellow squash, chopped
  • ½ cup nutritional yeast

 

INSTRUCTIONS:

  1. To begin, wrap the block of tofu in paper towels and press it for 5 minutes by adding some weight on top. This helps remove excess moisture. After pressing, remove the paper towels and cut the tofu into ½-inch-thick pieces.
  2. In a pressure cooker, add 1 tablespoon of vegetable oil and sauté the tofu pieces until they turn light brown on all sides. This should take a few minutes. Add 1 tablespoon of soy sauce to the tofu and sauté for an additional 10 seconds. Once done, remove the tofu from the pressure cooker.
  3. Place 1 cup of water in the pressure cooker and insert the steamer tray. Position the sautéed tofu on top of the steamer tray. Lock the pressure cooker lid securely into place, bring it to high pressure, and maintain this pressure for 5 minutes. Afterward, remove the cooker from the heat and allow the pressure to release naturally.
  4. In a large pan, heat 1 tablespoon of vegetable oil and sauté the diced onions, blanched and chopped broccoli, chopped green bell pepper, zucchini, and yellow squash until they become tender and aromatic. Add the sautéed tofu back into the pan, along with 1 tablespoon of soy sauce. Sauté everything together for an additional minute.
  5. Sprinkle the nutritional yeast generously over the tofu and veggies. This will add a delightful cheesy flavor to your dish.
