INGREDIENTS:

  • 16 ounces firm tofu, drained and mashed
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon turmeric
  • 1 tablespoon olive oil
  • ½ cup broccoli florets, blanched
  • ½ cup button mushrooms, sliced
  • ½ cup tomato, diced
  • 1 clove garlic, minced
  • ½ cup water
  • 2 tablespoons parsley, chopped

 

INSTRUCTIONS:

  1. In a large bowl, start by mashing the firm tofu either with your hands or a fork. Stir in the fresh lemon juice, salt, black pepper, and turmeric. This combination of spices will infuse the tofu with a burst of flavor and color.
  2. Heat the olive oil in the pressure cooker over medium heat. Add the blanched broccoli and sliced shiitake mushrooms. Sauté these vegetables for about 5 minutes until they begin to soften and develop a rich aroma. Add in the diced tomato and minced garlic, and sauté for an additional 30 seconds, allowing the flavors to meld.
  3. Now, introduce the tofu mixture to the sautéed vegetables. Stir everything together to create a harmonious blend of textures and flavors. Pour in the water, which will help create steam and pressure in the cooker.
  4. Lock the lid of the pressure cooker into place. Bring it to medium pressure and maintain this pressure for about 6 minutes. Once the cooking time is complete, remove the pressure cooker from the heat and allow the pressure to release naturally. This step ensures that the flavors are beautifully absorbed into the tofu.
