Apple Strudel, often referred to simply as “strudel,” is a classic Austrian pastry known for its flaky, paper-thin layers of dough enveloping a sweet and spiced apple filling. This delightful dessert has gained international acclaim for its harmonious combination of crisp pastry and tender, cinnamon-infused apples. With a history dating back centuries, apple strudel is not only a culinary masterpiece but also a symbol of Austrian heritage and European pastry tradition.

The origins of Apple Strudel can be traced to the Austro-Hungarian Empire, specifically to the region that is now modern-day Austria. The term “strudel” itself is derived from the German word “Strudel,” which means “whirlpool” or “eddy.” This name is a nod to the thin, flaky layers of pastry that whirl around the sweet filling when the strudel is sliced.

Apple Strudel’s history is intertwined with the broader history of pastry-making in Europe. Strudel pastry, characterized by its thinness, can be traced back to the Ottoman Empire, which introduced the idea of paper-thin dough to Europe through the Balkans. Over time, this concept of thin pastry layers was adapted and perfected by Austrian and Hungarian bakers.

The earliest known strudel recipe dates back to the late 17th century in a handwritten cookbook from Vienna, Austria. Initially, strudel fillings varied widely and included ingredients such as cheese, nuts, and various fruits. However, the apple filling quickly became the most popular choice due to the abundance of apples in the region.

Apple Strudel’s popularity surged in the 18th and 19th centuries, thanks in part to the influence of the Habsburg Empire. It became a staple of Austrian cuisine, particularly in Vienna, and was often served in the imperial courts and high-society gatherings.

Today, Apple Strudel is cherished not only in Austria but also in many countries worldwide. It has become a quintessential dessert enjoyed in homes, bakeries, and cafes, and it is often associated with the cozy warmth of family gatherings and holiday celebrations.

INGREDIENTS

For the Dough:

  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 3/4 cup lukewarm water

For the Filling:

  • 4-5 medium-sized apples (such as Granny Smith or Golden Delicious), peeled, cored, and thinly sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup breadcrumbs
  • 1/2 cup finely chopped walnuts or almonds
  • 1/4 cup melted butter
  • Powdered sugar for dusting

INSTRUCTIONS

  1. Prepare the Dough:
    • In a large bowl, combine the flour and salt.
    • In a separate bowl, whisk together the egg, vegetable oil, and lukewarm water.
    • Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  2. Knead the Dough:
    • Turn the dough onto a lightly floured surface and knead it for about 10 minutes, or until it becomes smooth and elastic. Form it into a ball.
  3. Rest the Dough:
    • Place the dough ball in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rest for at least 30 minutes.
  4. Prepare the Filling:
    • In a large mixing bowl, combine the sliced apples, granulated sugar, ground cinnamon, breadcrumbs, and chopped nuts. Mix until the apples are coated evenly.
  5. Roll Out the Dough:
    • On a clean, floured surface, roll out the rested dough into a large, thin rectangle. The dough should be so thin that you can almost see through it.
  6. Add the Filling:
    • Brush the entire surface of the dough with melted butter.
    • Spread the apple and nut filling evenly over one-third of the dough, leaving a border along the edges.
  7. Roll the Strudel:
    • Carefully fold in the two shorter sides of the dough to encase the filling.
    • Starting from the filled end, gently roll the dough into a log, using the parchment paper to help lift and guide it.
  8. Place on Baking Sheet:
    • Transfer the rolled strudel onto a parchment paper-lined baking sheet, seam side down.
  9. Bake:
    • Preheat your oven to 375°F (190°C).
    • Bake the strudel for approximately 30-40 minutes or until it turns golden brown and crisp.
  10. Cool and Serve:
    • Allow the apple strudel to cool slightly before dusting it generously with powdered sugar.
    • Slice and serve warm, either on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
