INGREDIENTS:

  • 6 neck of lamb cutlets
  • Water
  • 1 celery rib, including leaves, cut into chunks
  • 1 parsnip, cut into chunks
  • 1 large carrot, cut into chunks
  • 1 large starchy potato, peeled and chopped
  • 3 large scallions, chopped
  • 3 large sprigs of flat-leaf parsley, plus 2 tbsp finely chopped parsley for finishing
  • Sea salt and freshly ground black pepper
  • 1 small green cabbage, cored, leaves shredded
  • A few allspice berries
  • A few black peppercorns
  • Irish soda bread, heated in a low oven, to serve

 

INSTRUCTIONS:

  1. Place the lamb cutlets in a large saucepan or stockpot. Cover with cold water, leaving about 2 inches (5cm) of water above the meat. Add celery, parsnip, carrot, potato, scallions, and 3 sprigs of parsley. Season with salt and pepper. Bring to a boil over medium heat, then reduce the heat, partially cover, and gently simmer for about 1 hour. Skim off any foam that forms on the surface using a slotted spoon.
  2. Once cooked, remove the pot from heat. Take out the lamb cutlets and set them aside to cool. Once they’re cool enough to handle, separate the meat from the bones, reserving the meat.
  3. Remove any excess fat that’s on the surface of the broth. Discard the parsley sprigs. Add back the reserved lamb meat, shredded cabbage, allspice berries, and black peppercorns. Cover and return the pot to a simmer over low heat for about 5 minutes.
  4. Taste the broth and season with additional salt and pepper if needed. Stir in the finely chopped parsley.
  5. Serve the Lamb Broth piping hot, accompanied by slices of warm Irish soda bread.
