INGREDIENTS:

  • 1 ½ quarts (1 ½ liters) fish stock
  • 12 oz (350g) cod fillet
  • 4 tbsp (60g) butter
  • 1 onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 large leek, finely chopped
  • 2 tsp superfine sugar
  • 2 tbsp white wine vinegar
  • Salt and freshly ground black pepper
  • 1 ¼ cups (300ml) crème fraîche
  • Chopped parsley, to serve

 

INSTRUCTIONS:

  1. Start by bringing the fish stock to a boil in a large pot. Add the cod fillet to the boiling stock, and gently bring it back to a boil. Once done, remove the pot from the heat. After the cod has cooled enough to handle, carefully lift it out of the stock. Flake the cod, discarding any skin or small bones. Set aside both the flaked fish and the stock.
  2. In a large pan, melt the butter over medium heat. Add the finely chopped onion, carrot, and leek to the melted butter. Stir well to ensure the vegetables are coated with the butter. Cover the pan with a lid and reduce the heat to very low. Let the vegetables cook gently for about 20 minutes, stirring occasionally.
  3. Now, uncover the pan and add the reserved fish stock, superfine sugar, and white wine vinegar. Season the mixture with salt and freshly ground black pepper to taste. Bring the contents of the pan to a boil and then let it simmer for approximately 10 minutes.
  4. After the initial simmering, incorporate the crème fraîche and the flaked cod into the soup. Give it a good stir to combine all the flavors. Taste the soup and adjust the seasoning as needed.
  5. Reheat the soup gently, taking care not to bring it to a boil. Ensure it’s just warm enough for serving without compromising the delicate flavors.
  6. To serve, ladle the Henningsvær Fish Soup into bowls. Sprinkle each serving with freshly chopped parsley, adding a burst of color and a touch of herbal freshness to the dish.
