- Makes about 1 quart When we first opened the Creamery, we featured two different coffee flavors in our case: plain Coffee as well as
Coffee Toffee, which was the plain coffee base with almond toffee bits folded in. The crunchy Coffee Toffee became so popular that we
eventually took the plain version out of rotation. Here we offer you the original creamy base and give you the option to turn it
into Coffee Toffee (see Make It Your Own). - We use finely ground coffee, which allows for some of the grounds to pass through the sieve and give some nice texture to the ice cream. For a smoother ice cream, use coarsely ground coffee beans and the finest mesh strainer you have.
- The strength of flavor can also be intensified or lightened by extending or shortening your steeping time, respectively.

INFUSING AND CHILLING TIME: 2 hours or overnight

INGREDIENTS:

- 1¾ cups heavy cream
- ¾ cup 1% or 2% milk
- ½ cup sugar
- ¼ cup (¾ ounce) finely ground coffee
- ¼ teaspoon kosher salt
- 5 large egg yolks
INSTRUCTIONS:
- Infuse the milk/cream:
- Stir together cream, milk, half of the sugar, coffee, and salt in a nonreactive heavy saucepan
- Steep mixture until cream takes on strong coffee flavor
- Make the base: 3. Whisk yolks with remaining half of the sugar in a medium heatproof bowl
- Slowly add hot cream to yolks while whisking constantly
- Cook mixture until thickened, stirring constantly
- Strain the base through a fine-mesh strainer into a clean container, cool in an ice-water bath, and refrigerate for at least 2 hours or overnight
- Freeze the ice cream: 7. Freeze in ice cream machine according to manufacturer’s instructions
MAKE IT YOUR OWN:

- Add 1 cup finely chopped Almond Toffee in the last minute of churning to make Coffee Toffee
- Swirl in ⅓ to ½ cup of Fudge Ripple for a mocha effect
