INSTRUCTIONS

PREPARING THE SWEETBREADS

  1. Soak the Sweetbreads:
    • Place the sweetbreads in a bowl of cold water with slices of lemon. Let them soak for about 2 hours, changing the water several times to remove impurities.
  2. Blanch the Sweetbreads:
    • In a large saucepan, bring water to a boil.
    • Add the soaked sweetbreads to the boiling water and blanch them for about 5 minutes.
    • Drain the sweetbreads and immediately transfer them to a bowl of ice water to cool.
  3. Remove Membranes and Trim:
    • Once cooled, peel away any membranes or connective tissues from the sweetbreads.
    • Trim them into even-sized pieces.
  4. Sear the Sweetbreads:
    • In a skillet, melt 2 tablespoons of butter over medium-high heat.
    • Add the sweetbreads and sauté until they turn golden brown on all sides, about 4-5 minutes.
    • Season with salt and pepper to taste.
    • Remove the sweetbreads from the skillet and keep them warm.

 

MAKING THE MUSHROOM PUREE

  1. Sauté Mushrooms:
    • In the same skillet, add 2 tablespoons of butter.
    • Add the chopped shallot and minced garlic and sauté until they become translucent, about 2 minutes.
    • Add the sliced mushrooms and cook until they release their moisture and turn golden brown, about 5-7 minutes.
  2. Puree the Mushrooms:
    • Transfer the sautéed mushrooms to a blender or food processor.
    • Add the heavy cream and blend until you have a smooth and creamy puree.
    • Season with salt and pepper to taste.

 

ASSEMBLLING AND SERVING

  1. Plate the Dish:
    • Spoon a portion of the mushroom puree onto each plate.
    • Arrange the seared sweetbreads on top of the puree.
  2. Garnish:
    • Garnish with fresh parsley or chives, if desired.
  3. Serve Immediately:
    • Serve the sweetbreads with mushroom puree immediately while they are hot.
