  • 2 pairs of sweetbreads
  • 1 tablespoon of Crisco (or other cooking fat)
  • Salt and pepper to taste

INSTRUCTIONS

  1. Prepare the Sweetbreads:
    • Clean the sweetbreads by soaking them in cold water for at least an hour. This helps to remove any impurities or residual blood.
    • After soaking, place the sweetbreads in a pan and add enough water to cover them.
  2. Parboil the Sweetbreads:
    • Cook the sweetbreads in the water for approximately 20 minutes. This parboiling step helps to further clean and partially cook the sweetbreads.
  3. Cool and Firm the Sweetbreads:
    • Remove the sweetbreads from the cooking water and immediately place them in a bowl of cold water for 2 or 3 minutes. This will help firm up the sweetbreads and stop the cooking process.
  4. Dry and Season the Sweetbreads:
    • Thoroughly pat dry the sweetbreads with paper towels.
    • Rub the sweetbreads with a tablespoon of Crisco, ensuring they are well-coated.
    • Sprinkle the sweetbreads with salt and pepper to taste.
  5. Prepare the Pan:
    • Place the seasoned sweetbreads in a pan suitable for baking.
  6. Cook the Sweetbreads:
    • Preheat the oven to a hot temperature.
    • Pour brown sauce over the sweetbreads in the pan.
    • Cook the sweetbreads in the hot oven for approximately 20 minutes, basting them often with the sauce. This will help them develop a flavorful crust and keep them moist.
  7. Serve:
    • Once cooked to perfection, serve the sweetbreads hot, garnished with additional sauce if desired.
