INSTRUCTIONS

  2. Draining and Mashing:
    • Drain the cooked potatoes thoroughly.
    • Using a potato masher or a ricer, mash the potatoes until they are smooth and free of lumps.
  3. Seasoning:
    • While the potatoes are still warm, add the butter, egg yolks, salt, white pepper, and a pinch of ground nutmeg if desired.
    • Mix everything together until the ingredients are fully incorporated, and the potatoes are creamy and fluffy.
  4. Piping the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Transfer the potato mixture into a piping bag fitted with a star tip.

  5. Baking:
