Canapés, in general, have a history dating back to the 19th century and are believed to have originated in France. The term “canapé” originally referred to a type of bread or biscuit used as a base for small, flavorful toppings. Over time, canapés evolved to include a wide range of ingredients, making them a versatile and popular choice for serving small bites before a meal.

Cheese has always been a cherished ingredient in cuisine, and when combined with canapés, it creates a winning combination of textures and flavors. Cheese Canapés became a staple in the world of appetizers due to their simplicity and the rich, indulgent taste of cheese.

The addition of Crisco, mustard, sherry, and seasonings to the cheese mixture adds depth and complexity to these canapés, making them even more irresistible.

Today, Cheese Canapés continue to be a beloved choice for entertaining guests, whether at formal gatherings or casual get-togethers. They remain a classic and timeless appetizer appreciated for their versatility and deliciousness.

INGREDIENTS

  • 8 croutes of bread (cut from slices of stale bread using a 2-inch round cutter)
  • 1/4 pound of cheese
  • 2 tablespoons of Crisco (vegetable shortening)
  • Salt and red pepper to taste
  • 1 teaspoon of mustard
  • 1 dessertspoon of sherry

INSTRUCTIONS

  1. Begin by preparing the croutes of bread. Cut them out from slices of stale bread using a round cutter, making them approximately 2 inches across.
  2. Heat Crisco in a frying pan until it’s hot.
  3. Fry the croutes of bread in the hot Crisco until they turn a golden color. This step will give the croutes a crispy and appetizing texture.
  4. While the croutes are frying, cut up the cheese into smaller pieces.
  5. Place the cheese in a mortar along with the Crisco, and pound it until it becomes a smooth paste. The addition of Crisco enhances the creaminess and richness of the cheese.
  6. Season the cheese paste with salt and red pepper to taste, adding a bit of heat and spice.
  7. Mix in the mustard and sherry to the cheese paste. These ingredients will add depth of flavor and a hint of tanginess.
  8. Once all the ingredients are thoroughly combined, spoon the cheese mixture onto the hot, crispy croutes of bread.
  9. Place the topped croutes in the oven and heat them until they are hot all the way through.
  10. Serve the Cheese Canapés immediately while they are warm and the cheese is gooey and delicious.

Cheese Canapés are a crowd-pleasing appetizer that combines the comforting goodness of cheese with a crispy base, creating a flavor explosion in every bite. They are perfect for entertaining and celebrating the joy of good food and good company.
