After discovering bottles of saffron syrup at our local branch of the Spanish Table, we started playing around with the extraordinary spice in desserts rather than just in savory preparations. This recipe doesn’t use the syrup, but was inspired by it. Brush it on grilled figs, pears, mangoes, or pineapple.

MAKES: ABOUT ½ CUP

 

INGREDIENTS:

  • 8 tablespoons (1 stick) unsalted butter
  • 1 tablespoon mild-flavored honey
  • 2 big pinches of saffron threads

 

INSTRUCTIONS:

  1. Melt the butter in a small saucepan over medium-low heat.
  2. Stir in the honey and saffron.
  3. When the honey has melted into the butter and the saffron has “bloomed” red-yellow, the butter is ready.
  4. Serve the saffron-honey butter right away, spooned over grilled fruit.
