- 3 scallions, very finely chopped by hand
- 1 small carrot, very finely chopped by hand
- Zest of 1 medium lime and juice of 2 medium limes
- 2 tablespoons white vinegar
- 2 tablespoons water
- 2 tablespoons minced fresh thyme
- ½ to 1 fresh Scotch bonnet or habanero chile, seeded and very finely minced
- ½ teaspoon kosher salt or coarse sea salt
- ½ cup vegetable oil or sunflower oil

- Prepare the Fresh Ingredients: Begin by finely chopping the red onion, scallions, and carrot. Zest one medium lime and squeeze the juice from two medium limes. Gather the minced fresh thyme and finely mince the Scotch bonnet or habanero chile after removing the seeds.
- Combine Ingredients: In a bowl, combine the finely chopped onion, scallions, carrot, lime zest, lime juice, white vinegar, water, minced thyme, minced chile, and kosher salt.
