INGREDIENTS:
- 12-ounce package fresh cranberries
- 1 cup granulated sugar
- 1 medium orange, peeled and white pith removed, chopped
- ¼ cup water
- 3 tablespoons minced shallots
- 1 teaspoon ground dried ginger
- 1 teaspoon yellow mustard seeds
- 1 teaspoon ground dried mild to medium red chile, such as New Mexican
- ¾ teaspoon ground cumin
- ¾ teaspoon ground cinnamon
- ¾ teaspoon salt
- 4 ounces dried figs, preferably Mission, chopped
- ⅓ cup unsalted pistachios, chopped
INSTRUCTIONS:
- In a saucepan, combine the cranberries, sugar, chopped orange, water, minced shallots, ground dried ginger, yellow mustard seeds, ground dried red chile, ground cumin, ground cinnamon, and salt.
- Cook the mixture over medium-high heat, stirring occasionally, until the sugar dissolves and the cranberries pop and thicken. This will take about 10 to 15 minutes.
- Stir in the chopped figs and pistachios, and then remove the saucepan from the heat.
- Let the cranberry chutney cool, and then refrigerate it in a covered container for at least 1 hour or up to several weeks. If it becomes too thick, you can add a little water to achieve the desired consistency.
- Serve the chilled cranberry chutney at the table with pork as a delightful and tangy accompaniment.
